Karubi, also known as short ribs, are tough meat but highly marbled and full of flavour.
This boneless short rib is sliced very thin (1.5mm), making it perfect for gyudon, shabu shabu, and hot pot. Since short ribs come from the section between the rib and the chuck, it combines flavors and textures of both – rich marbling of rib steaks with the deep beefy flavor of chuck roast. Short plate and boneless short rib can be used as substitutes, as both cuts have great marbling and a very tender texture.
