Cook the onion and thyme for 5 minutes or until soft. Season the tenderloin generously with salt and pepper. Heat a tablespoon of oil in a large pan on high heat. Sear until well browned on all sides. Remove the tenderloin from the pan and let cool.<\/p>\n<\/div>\n<\/div>\n<\/div>\n<div id=\"row-2019494679\" class=\"row row-collapse align-middle\">\n<div id=\"col-1853702332\" class=\"col medium-11 small-10 large-11\">\n<div class=\"col-inner\">\n<p>Place onion mixture, breadcrumbs, parsley, garlic, egg and 1 tablespoons of olive oil in a food processor and process until combined. Season the mixture with salt and pepper. Pat beef dry with paper towel. Spread mustard over top of beef to cover. Press stuffing in an even layer over top of beef to cover.<\/p>\n<\/div>\n<\/div>\n<\/div>\n<div id=\"row-704235244\" class=\"row row-collapse align-middle\">\n<div id=\"col-1942411871\" class=\"col medium-11 small-10 large-11\">\n<div class=\"col-inner\">\n<p>Preheat oven to 220C\/200C fan forced.<\/p>\n<p>Place a large sheet of baking paper on a work surface with short edge facing you. Arrange the pancetta on the paper in overlapping rows to form a rectangle the length of the tenderloin. Place the beef in the centre of the pancetta, stuffing-side up, and wrap the beef with the pancetta. Roll it firmly and carefully peel off the baking paper.<\/p>\n<\/div>\n<\/div>\n<\/div>\n<div id=\"row-2027014505\" class=\"row row-collapse align-middle\">\n<div id=\"col-1062331700\" class=\"col medium-11 small-10 large-11\">\n<div class=\"col-inner\">\n<p>For best results, firmly but gently tie the roast with kitchen string at 1-inch intervals.
