BRAISED beef short ribs IN red wine

Serves 4 | Prep time 1 hr | Cooking time 3+ hrs

Ingredients:

  • 1.5 kg bone-in beef short ribs, 3-4 inch pieces (approx 5 pcs)
  • 2 tbs all-purpose flour
  • 2 tbs olive oil
  • 1 cup dry red wine (more if you prefer a more pronounced flavor) or 1 can of malty brown ale
  • 2 cups chicken stock or water
  • 3 carrots, large chunks
  • 3 waxy potatoes, cut into large chunks

 

  • 1 medium onion, chopped
  • 400g fresh button mushrooms, halved
  • 1 tsp fresh thyme leaves, chopped
  • 5 sage leaves
  • salt and freshly ground pepper
  • fresh parsley for garnish (optional)

Directions:

In a bowl, toss short ribs with flour until evenly coated.

Heat oil in a large dutch oven or heavy bottomed pot. Brown the short ribs on all sides over moderately high heat in a single layer. Remove and set aside until all pieces are done.

Fry onions till translucent. Return the meat and any juices to the pot.

Add the wine and reduce by half then add the chicken stock. Cover and cook over low heat until the meat is tender but not falling apart, about 2-3 hours.

Add carrots, potatoes, mushrooms, and the herbs. Season with salt and black pepper.

Cover and simmer over low heat until the vegetables are tender, about 30 minutes. Garnish with fresh parsley and serve.
