Place all the ingredients for the burger patties in a large bowl and mix thoroughly by squeezing the mixture. Using an oiled burger press or wet hands, divide and shape the mixture into 4 portions.
Combine the ingredients for the garlic aioli in a bowl and mix it all up.
Heat a frying pan with oil. Add the minced garlic and mushrooms. Fry till dry and season with pepper and salt. Set aside.
Fry bacon over low heat till crispy and set aside.
Using the leftover bacon oil in the pan, cook the patties for 3-4 minutes on each side or until a nice crust has formed. Place a slice of cheese over the patty when both sides are cooked and set aside.
Using a clean pan, melt butter over low medium heat and toast the buns till crispy and golden brown.
To serve, assemble the burger with a lettuce leaf on the bottom followed by tomato slices, burger patty, garlic aioli, 2nd burger patty, mushrooms, aioli, bacon, pickles and top of the burger bun.
