Ingredients:
- 1kg beef tenderloin (single piece)
- salt and freshly ground black pepper
- 1 tbs olive oil
Mushroom duxelles:
- 2 tbs olive oil
- 2 tbs unsalted butter
- 600g mushrooms, finely chopped or pulse-chopped in a food processor
- 6 shallots, minced
- 1 large sprig fresh thyme
- 6 thin slices Parma ham or prosciutto
- 3 tbs mustard
- a little flour, for dusting
- 500g frozen puff pastry sheet, thawed
- 2 large egg yolks, beaten
