Ingredients:
- 2 tbsp olive oil
- 4 lamb shanks (400-500g each)
- 1 large yellow onion, finely chopped
- 1 medium carrot, finely chopped
- 2 large carrots, peeled and cut into chunks
- 2 large potatoes, peeled and cut into chunks
- 2 celery ribs/sticks finely chopped
- 4 garlic cloves, minced
- 2 sprigs fresh rosemary
- 2 tbsp tomato paste
- 2 tbsp plain flour
- 1½ cups red wine (optional)
- salt and pepper to taste
- Fresh parsley, chopped (for garnishing)
